Waffles

This is the recipe that I go off of to make waffles. We make at least a double batch, and freeze the remainders in sandwich bags. When we're in a hurry in the morning, we take one out, pop it in the toaster and we're good to go. If freezing, be sure to make sure to cook these so that they are a bit crispy on the outside so that they don't get soggy and nasty.
  • 2-1/4 cups flour
  • 4 teaspoons baking powder
  • 2 eggs, lightly beaten
  • 2-1/2 cups rice milk
  • 1/4 cup oil (we use canola)
I just toss everything together (according to the order on the list) and stir until combined (there will probably be lumps) I believe the original recipe said to mix dry first, mix the wet ingredients and then combine. I honestly don't want another dish to wash.
